Banana Bread






Ingredients:
1/2 Stick of Butter, Softened
2 Eggs
2-3 Overripe Bananas
2/3c Sugar
1 1/3c Bread Flour
3/4t Salt
1/2t Baking Soda
1/4t Baking Powder
1t Cinnamon




Directions:

1. Preheat the oven to 350.
2. Mix the butter, eggs, bananas, and sugar together, using a potato masher. There can be small chunks of banana, as in pea-sized, but you want it pretty mashed. In a separate bowl, mix your dry ingredients and then mix your wet and dry with a spatula. I added half a cup of chocolate chips to one loaf and it turned out well, although choco-banana is not my fave. You could also add nuts or anything else wierd that you like.
3. Heavy grease a loaf pan, pour in the batter, and bake for about 50 minutes. Let the loaf cool for about 10 minutes before removing it from the pan.

Easy Tomato Bisque



Ingredients: 
2 Medium Yellow Onions
1 Head of Garlic
3 Cans of Diced Tomatoes
2 Cans of Tomato Paste
1 Cup of Heavy Whipping Cream
3 Cups of Chicken Broth
Basil
Oregano
Salt
Pepper

 

Directions:
Begin by caramelizing two medium yellow onions, toss in a full head of diced garlic, add three cans of diced tomatoes (or four large hothouse tomatoes), two small cans of tomato paste, and stir to mix. Add a cup of heavy whipping cream, along with basil, oregano, salt, and pepper to taste. Finally, stir in a box of chicken broth (about three cups), and simmer until to your desired thickness.

Ranch Pork Chops

I made this for the first time yesterday. I adapted it from a recipe found online, and it was easy and delicious. I served it with wheat rolls and milk, so we hit all of our food groups. Also, the types of veggies are totally up to you. The original recipe only called for potatos, but that didn't sound so good. I purchased my veggies from the local (and sadly, seasonal) farmer's market here in Lawton.

Italian Chicken Recipe

I made this for the first time yesterday. I adapted it from a recipe found online, and it was easy and delicious. The chicken practically fell apart, so no knives were needed. I served it with garlic toast that I made at the same time. I advise drinking milk with this meal and offering a bread on the side in order to hit all of your food groups. Also, the mushrooms and mozzarella are totally optional.

Chicken & Black Bean Tacos

I made this for the first time yesterday. I adapted it from a recipe found online, and it was easy and delicious. My kiddos could make it alone, with basic adult supervision. I advise drinking milk with this meal, and offering a fruit for dessert in order to hit all of your food groups. Also, if you don't like spicy foods, you can skip the vinegar and chili powder.
